I've been obsessing at the thought of pumpkin pancakes lately, and this looks like a promising version.

Recently I ate a delicious crepe filled with ricotta cheese, applesauce, and cinnamon, and I'm determined to try that as a kind of filling between layers of pumpkin pancakes. Think it would work? (I figure even if it fails, it would have to be a pretty tasty failure!)
