To try bakes oatmeal, no way.  Then one day she made it when I was at her house for the weekend.  Reluctantly, I tried it and loved it.  So I found this recipe and because I love Buttermilk, I loved the recipe. I usually make it the same day and my add-ins vary depending on what I’m feeling.  Honestly though, walnuts, peanut butter, coconut … yum!

My guess is, you combine them overnight to soften the oats, but I’m not positive. I’m pretty sure you can add in whatever you want, although too much almond meal would probably change the texture. I have never used it before so I’m not sure when you should add it in. I’d probably add it in the morning and if that doesn’t work, try it the night before 🙂 Hope that helps!

This is my first time visiting your website. I was looking for a healthy baked oatmeal recipe and found your website. I was wondering, why do you combine some of the ingredients together and let them sit in the fridge overnight? Is it just a morning convenience thing? Something I can skip? I will replace the butter with unsweetened applesauce, add chopped walnuts, and then experiment with how much added sugar I can go without. I realize that 0 added sugar would probably make it unbearable lol. Also, I make homemade almond milk and then dry out the pulp to make almond meal. Wondering if I can add this in, and if so, should I put it in the overnight mixture or not? Thanks!

My add-ins were peaches, blueberries, bananas, walnuts, apples and cranberries and it was awesome! It was yum! But instead of a 9×9 square pan I used my red round pie pan (it looked prettier) and it still turned out great. Thanks again for another great recipe!
