I made these last week, and they were delicious! I even messed up the recipe a little (cut the raw chicken into strips instead of cooking the breasts whole), and it was still great. My folks ate with us that night and can’t stand anything spicy, so used a little less chipotle…great flavor and not too spicy, even for them. Thanks for a keeper :).

I just tried this recipe tonight. So, so good and really easy! I pre-cooked and shredded a big batch of chicken the night before, and used half for this recipe and saved half for another meal. It made the prep time that much quicker after working a long day. This recipe is definitely a keeper!!
