They were absolutely delicious! I loved them and so did my husband! I did add the black beans and they were yummy! I have two small kids and they are not green pepper fans, so I scooped out some of the filling and spooned it into some whole grain tortillas I had and made them quesadillas. Perfect! I will make this again…also passed the recipe to my mom.
