I also do this with one of my salsa recipes
and it disappears really fast.
Great recipe as originally posted! I just always like to experiment with variations of an already great recipe.

I am actually going to try canning this recipe myself. I am just going to omit the sour cream and then add it when I open a jar. It has lemon & lime juice which is a good preserver so I am thinking it might work!!
