Old Fashioned Apple Cake with Brown Sugar Frosting

I can’t even begin to tell you how good this old fashioned apple cake is! It is one of the best cakes I’ve ever made, and definitely my new favorite fall dessert.

The cake is perfectly spiced, incredibly moist, and full of chunks of apples. And the brown sugar frosting tastes just a little bit like brown sugar fudge!

Old Fashioned Apple Cake with Brown Sugar Frosting

The combination of the moist cake and rich frosting makes this cake a winner. It’s very sweet, which means you can cut small pieces and serve a crowd. It’s definitely my new go-to pot-luck dessert!

I made this old fashioned apple cake to take to pot-luck lunch at church, and it was a definite hit. I didn’t bring too many pieces home, and any cake that was left over was quickly gobbled up by family members later that night. I think that means it was a success. 🙂

Please try this cake – I have a feeling it will become one of your favorites as well. 🙂

Best Ever Banana Cake

I have a great banana cake recipe to share with you today! This best ever banana cake is incredibly moist and bakes up perfectly every single time! I got this recipe from Food.com where it has over 1,000 5 start reviews. Seriously – you don’t mess with a recipe like that! I baked this cake in a 9×13 pan because it seemed easiest at the time, but I’m pretty sure this cake would work as cupcakes, in a bundt pan, as a layer cake, etc. It has a really unusual baking and cooling process that is supposedly the secret to its success. I don’t know if that’s the reason this cake is so good, but I do know that I followed the recipe exactly and the cake turned out perfectly. It was full of banana flavor, incredibly moist, and the cream cheese icing was absolutely delicious. I’ll definitely be making this one again!

One Bowl Chocolate Cupcakes - the best chocolate cupcakes ever! And they are so easy to make!

I hope you don’t think I’m exaggerating when I say that these are the best chocolate cupcakes ever. Seriously, the best! I have made this recipe countless times and they always come out perfectly. When I made cupcakes for weddings and other events, this was my go-to chocolate cupcake recipe, it’s that good! The cupcakes are rich and moist and full of chocolate flavor. They basically melt in your mouth. And even better, they are so easy to make. You actually only need one bowl to make them – it doesn’t get much simpler than that. 🙂

As a side note – don’t be scared of the coffee in the recipe if you are not a coffee drinker. The cupcakes have zero coffee flavor, the coffee just helps bring out the taste of the chocolate. If you really don’t want to use it, you can substitute water.

They don’t have an overly strong or dark gingerbread flavor, but have just the right amount of molasses and spices to make them taste like gingerbread without being overwhelming. I love making cupcakes for built-in portion control (you’ll need it with these – they’re good!), but also because they are just so cute! Who can resist a moist little cake with a pretty mound of cinnamon topped frosting on top?? These gingerbread cupcakes are topped with a whipped vanilla buttercream – a traditional buttercream that’s made with cream and whipped extra long to make it a little more light and fluffy than usual. The rich and creamy icing pairs perfectly with the spiced cupcakes and the combination is delicious. You need to try these this holiday season. 🙂

*Note: This is my favorite set of cupcake frosting tips – I used the large round one to pipe the frosting onto these cupcakes.

Pumpkin Snack Cake

If you make one pumpkin recipe this fall, it needs to be this pumpkin snack cake. I know I have been posting lots of pumpkin recipes (and they’re all good!), but this cake is one of the best pumpkin desserts I’ve ever had!

It looks so unassuming, this simple little snack cake with homemade whipped cream. But it is light and moist and perfectly spiced for fall. And the cream is freshly whipped and lightly sweetened, and so perfect on top of the cake.

One of the best things about this cake is that it with whipped cream on top it is a yummy dessert, but without the whipped cream it is a perfect snack! I love versatile recipes like that. 🙂 And this little pumpkin snack cake is delicious no matter how you serve it!

I took this cake to a gathering with friends and it got rave reviews. I not only got multiple requests for the recipe, but people wanted me to send them the recipe right away, before it even went up on the blog. Plus I even heard one person say she doesn’t like anything made with pumpkin, but she still loved this cake.

This recipe is a winner! Please make it and report back – I’m sure everyone is going to love it!

Apple Fritter Cake

Don’t you just love apple season? West Michigan (where I live) is full of apple orchards and one of my favorite fall activities is going apple picking, and then figuring out fun new ways to use up all the apples I just picked. 🙂 That’s where this recipe comes in. You are going to love this apple fritter cake! It is chock full of cinnamon sweetness, baked apples, and topped with a delicious powdered sugar glaze. Yum!! The cake itself is light and buttery, and very moist. It is so full of tender baked apples that it almost wants to fall part as you cut it. But that is not a problem, because undoubtedly you will want to put each slice in a bowl and pile it high with vanilla ice cream before eating it anyway. 🙂

Blueberry Muffin Cake

Just when I think I’v e made all the blueberry recipes I could ever hope to try, another one jumps out at me. That’s the case with this absolutely delicious blueberry muffin cake!  I saw a picture of this cake on Pinterest and immediately wanted to try it. Perfect timing, since I had just gone blueberry picking and had fresh berries just waiting to be baked with. 🙂

The blueberry muffin cake was everything I hoped it would be – soft and tender cake, crunchy crumb topping, and a perfectly sweet glaze on top! By itself the cake isn’t overly sweet, and it really does taste like blueberry muffins.

The sweet and crunchy topping and the vanilla glaze are what turn this cake into something special. I’m actually not a huge fan of blueberry baked goods (I make lots of them though because Mike loves them!), but I would eat this cake just for the topping – it’s that delicious! 🙂 You can use frozen berries in this recipe as well, so if it’s not still blueberry season where you are you don’t have to miss out.

I served this cake as dessert after dinner, but I think you could also pass it off as a breakfast coffee cake. Yum! Try this one before summer is over – you’re going to love it!

I really hope you all aren’t sick of pumpkin yet! I know the rest of the internet has been going pumpkin crazy for months now, but I am just getting started. 🙂 Even if you are feeling a little tired of pumpkin, something tells me this pumpkin coffee cake just might change your mind about that. You will love this! The recipe title is a bit misleading – this recipe tastes more like a dessert cake than a traditional coffee cake. No matter what you call it though, it’s definitely delicious. The cake is moist and tender, and full of fall spices and pumpkin flavor. The cake layer is delicious on it’s own, but by the time you add the crumb topping and cinnamon glaze, you’ve got a dessert (or breakfast! ;)) that everyone will love.

Homemade Apple Pie Spice

I have a nice fall treat for you today – homemade apple pie spice! This homemade spice mix smells like all the best parts of fall and tastes like apple pie (without the apples of course). This mix is great to use in baked goods this time of year. You can, of course, use it in any recipe that calls for apple pie spice, but I also like to use it to replace the cinnamon in any number of recipes. It’s really just a mix of fall spices, so don’t let the name confuse you. It’s great in apple pie, apple crisp, any sort of pumpkin bread or apple bread, etc. The options are endless! I’ll be giving you a few ideas in the coming weeks, but in the meantime it doesn’t take any time at all to mix this up to keep on hand. Plus it smells great and really gets you in the mood for fall!

Thick and Chewy Chocolate Chip Cookie Cake

I am so excited to share this chocolate chip cookie cake with you today! Like the name says, it truly is thick and chewy and absolutely delicious.  I love cookie cakes and used to ask for one every year for my birthday. What is it about a cookie cake that tastes so much better than regular old chocolate chip cookies?

I originally found this recipe on Pinterest and immediately searched for a reason to give it a try. And it was so good that I already want to make it again. 🙂  The cookie is so soft and chewy, and it has the perfect chocolate chip cookie flavor.  I decorated the top with my favorite simple buttercream icing (recipe included below), but you can play around and use whatever you want. No matter how to top it, if you’re anything like me, you won’t be able to get enough of this cookie cake!
