These are my favorite, go to gingerbread pancakes, the best I’ve found. I put my recipe card in a plastic sleeve since I make them so often and can find the recipe easily. I make them with half wheat flour and top with pure maple syrup, yummy! Thanks for the great recipe 🙂

I didn't tell my sisters they were gingerbread because I thought it might scare them off. They were concerned with the brown color, thinking I may have smuggled in wheat flour, but I told them it was the cinnamon. Everyone loved them and we saved the extras in the fridge and reheated them for several days afterwards. This was a great Christmas recipe and I will make it again!
