Lemon Puppy Chow

I’m guessing most people are familiar with puppy chow – chex mix coated in a mixture of chocolate and peanut butter then covered in powdered sugar. But I’m also guessing that you’ve never tried a lemon version! This lemon puppy chow is a recipe that’s perfect for Summer. It has a bright citrus flavor, but it has the same texture and addictive nature of regular puppy chow.  I couldn’t seem to stop eating it! Everyone I’ve shared it with has felt the same way – this stuff is so good! You can bet that I’ll be making this again and I hope you try it and enjoy it as much as we did. But I’m warning you – you should only make this if you have plenty of people to share it with – it’s too dangerous otherwise!

Lemon Puppy Chow

Ingredients:

  • 10 cups rice Chex
  • 1 1/2 cups white chocolate chips
  • 1/4 cup unsalted butter
  • 4 tsp lemon zest
  • 2 tsp lemon juice
  • 2 cups powdered sugar

Directions:

  1. Pour the cereal into a large bowl and set aside. Combine the white chocolate, butter, lemon zest, and lemon juice in a medium sized microwave safe bowl. Microwave for 30 second intervals, stirring after each interval, until smooth.
  2. Pour the white chocolate mixture over the cereal and gently stir until the cereal is evenly coated. Transfer the cereal into a gallon size ziploc bag, add the powdered sugar and shake until cereal is evenly coated.
