Candy Corn Popcorn Balls

How fun are these candy corn popcorn balls? I don’t normally make Halloween specific treats, but when I saw this recipe in the most recent Food Network Magazine, I knew I had to try it. If nothing else, it served as a good excuse to buy a bag of candy corn. 🙂 These popcorn balls ended up being pretty easy to make and they tasted great.  They are sweet and sticky, and the little pieces of candy corn throughout were my favorite part. I love that the addition of peanuts and candy corn makes these just a little different from traditional popcorn balls, and I can just picture these being served at a Halloween party. I plan on making these again to snack on while handing out candy to the neighbor kids.  🙂

Candy Corn Popcorn Balls

Candy Corn Popcorn Balls

Yield: Makes 12 popcorn balls

Ingredients:

  • 6 tablespoons popcorn kernels
  • 1/4 cup peanut oil
  • 1/2 cup sugar
  • Cooking spray
  • 1 cup candy corn
  • 1/2 cup salted roasted peanuts
  • 4 cups mini marshmallows
  • 4 tablespoons unsalted butter

Directions:

  1. Heat a large pot over medium-high heat. Add the popcorn kernels and peanut oil. When the oil starts to sizzle, sprinkle the sugar over the kernels. Cover with a tight-fitting lid and shake the pot until the popping slows down, about 8 minutes. Remove from the heat and set aside to cool. Spray a large bowl with cooking spray and add the popcorn, candy corn and peanuts.
  2. Combine the marshmallows and butter in a large pot over medium-high heat. Cook, stirring, until melted and smooth, about 5 minutes.
  3. Pour the melted marshmallow mixture over the popcorn mixture and gently toss to coat. Coat your hands with cooking spray, then shape the popcorn into 3-inch balls. Let cool.
