Blueberry Oatmeal Breakfast Bars

You are going to love these blueberry oatmeal breakfast bars! They are like a little taste of summer in the midst of this long and dreary (and cold!) winter. You can use frozen blueberries to make these sweet breakfast treats, which means you can make them year round – even when the weather feels like 20 below. 🙂 I made these to share with some friends a few weeks ago, and it was a good thing I ended up giving away most of them. Mike and I easily could have polished off way too many of them. The bars have a brown sugar and oatmeal crust, and the filling is absolutely loaded with blueberries. It actually tastes a little bit like blueberry pie in breakfast form – yum!! You could cut back on the sugar a bit if you like things a little less sweet. Or, you could add some ice cream on top and even serve these as a light dessert. No matter how you serve them, they are sure to be a hit. I hope you enjoy them as much as we did. 🙂

Blueberry Oatmeal Breakfast Bars

Ingredients:

  • 2 1/4 cups Old Fashioned oatmeal
  • 2 1/4 cups flour
  • 1 1/2 cups brown sugar
  • 1 cup butter (2 sticks)
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3 cups blueberries
  • 1/4 c. sugar
  • 1 Tbsp. corn starch

Directions:

  1. Preheat oven to 350 degrees. Lightly grease a 9x13 pan and set aside.
  2. In a large bowl combine the oatmeal, flour, brown sugar, soda and salt. Melt the butter, and pour over the oatmeal mixture. Mix until fully incorporated and mixture is crumbly. Press 2/3 of the oatmeal mixture into the bottom of the prepared pan, saving the other 1/3 for the topping.
  3. In a separate bowl, combine the blueberries, sugar and corn starch. Mix until the blueberries are evenly coated with the sugar and corn starch. Pour over the bottom crust. Crumble the remaining oatmeal mixture over the blueberries.
  4. Bake at 350 for 20-25 minutes or until golden brown. Remove from the oven and let cool completely before cutting.
