Don’t you just love no-bake cookies? These no-bake ritz cracker cookies are ridiculously easy and dangerously good!

I made these with my mom, and we had a fun time convincing people to try them and then asking them to guess what was in them. 🙂 I’m not sure anyone guessed correctly, but everyone who tried them absolutely loved them!

To make these “cookies”, all you do is take two ritz crackers, sandwich some peanut butter between them, and then dip the whole thing in chocolate. You can decorate the top with sprinkles or a chocolate drizzle, and then that’s it! You’ve made the easiest cookie ever, and it tastes so good.

When we made them, we took things a little further and replaced the peanut butter with nutella in the ones dipped in white chocolate – those were even better than the peanut butter version!

No-Bake Ritz Cracker Cookies

Yield: Makes 40 cookies

These sweet and salty no-bake ritz cracker cookies are a delicious combination of chocolate and peanut butter, and are so easy to make!

Ingredients:

  • 80 Ritz crackers
  • 1 cup creamy peanut butter (I did half with peanut butter, and half with Nutella, yum!!)
  • 12 oz chocolate almond bark
  • 12 oz white almond bark

Directions:

  1. Spread half of the Ritz crackers with a layer of peanut butter. Top with the remaining crackers to make peanut butter cracker sandwiches. In a microwave-safe bowl, melt the chocolate almond bark on 50% power, stirring every 30 seconds. In a separate bowl, melt the white almond bark. Using a fork, dip each cracker sandwich in the melted chocolate and place on a cookie sheet lined with waxed paper. Dip half the cookies in the chocolate almond bark, and half in the white almond bark. Let the cookies set until the chocolate has hardened.
  2. *If desired, drizzle a little bit of white almond bark over the chocolate cookies and chocolate almond bark over the white cookies. Alternately, you can top them with sprinkles while the chocolate is still wet.
