Pizza Bites

Another delicious recipe for that pizza dough I’ve been raving about. I got this recipe from Annies Eats (the same place I got the pizza crust – that girl knows her pizza!), and we loved it. Mike loves any sort of stromboli/pepperoni roll, so this recipe was a pretty sure thing. They’re like little mini pizzas, you can’t go wrong with that! These would be perfect for any sort of get together – they taste fantastic and who doesn’t like bite sized foods? They’re fairly simple to make as well. Wrap up some cheese and pepperoni inside pieces of pizza dough, bake, and serve! We were in a rush to eat these the night I made them, so I didn’t leave them in quite as long as I should have, which is why they’re not very brown on top. It didn’t affect their taste though – these were happily devoured. And they might be my new favorite party food.

Pizza Bites

Ingredients:

½ batch pizza dough (enough for 1 pizza)
4 oz. mozzarella cheese, cubed (about 20-24 pieces)
Sliced pepperoni
Olive oil
Italian seasoning
Grated Parmesan cheese

Directions:

Preheat the oven to 400˚ F. Lightly grease a 9-inch pie plate. Divide the pizza dough into approximately 24 equal pieces. Take one of the dough pieces and wrap it around a cube of cheese and a slice or two of pepperoni. Pull the edges of the dough around the filling and pinch closed. Place seam-side down in the baking dish. Repeat with the remaining dough pieces.

Lightly brush the tops of the dough balls with olive oil. Sprinkle with Italian seasoning and grated Parmesan cheese. Bake for 20 minutes, or until the tops are golden brown. Serve warm, with pizza sauce for dipping.
