Chicken Sausage and Pepper Sandwiches

I’m on a quest to find some quick, easy and healthy dinner ideas. Over the winter it was easy to make a big pot of soup, or a batch of spaghetti sauce on the weekend that we could eat throughout the week. But now that the weather is getting warmer, I want more fresh and healthy meals. And since we tend to come home from work starving, I definitely want quick meals.

These sandwiches fit the above criteria perfectly. Peppers and onions, sauteed until crisp/tender give them a nice healthy crunch. And chicken sausage is a great addition if you’re looking for something a little healthier that still tastes great and has a lot of flavor.  Best of all, this meal is very quick to throw together – we were eating dinner about 15 minutes after I started chopping. Mike rated this meal a 3.5, and the same husband who has previously complained about the amount of vegetables in his food was heard to say that he “loves orange peppers.” I call that a success.

Chicken Sausage and Pepper Sandwiches

Ingredients:

1 orange, yellow, or red pepper, sliced and cut into 1 inch pieces
1 small onion, sliced and cut into 1 inch pieces
2 chicken sausage links, cut in half lengthwise and cut into semi-circles
olive oil
salt and pepper
hot dog or hoagie buns
provolone cheese

Directions:

Saute the peppers and onions in a pan over medium high heat with a little bit of olive oil and salt and pepper. When the vegetables are cooked, but still crisp, add in the chicken sausage. It's pre-cooked so you just have to heat it with the vegetables.

While the vegetables are cooking, place cheese slices on buns and broil until cheese and melted and slightly browned. Fill the roll with the sausage/veggie mixture and enjoy!

Makes about 3 rolls, stuffed full. This recipe is heavy on the veggies, and light on the sausage. Adjust ingredient amounts according to taste.
