Crock Pot Barbecue Chicken Tacos

How good do these barbecue chicken tacos look?? We love tacos in our house and could easily eat them once a week. I love trying new and unique taco recipes, and this barbecue chicken version is definitely a new favorite. It’s a crock pot recipe, which makes this meal extremely easy to throw together. The barbecue chicken is delicious, but the toppings really make these tacos stand out. The seasoned corn, cheddar cheese, and crispy fried onions are definitely an integral part, so don’t skip them. These tacos have become a meal plan staple in our house and hopefully they will in your house as well. 🙂

Crock Pot Shredded Beef Tacos
Meet my new favorite recipe! You are going to love these Crock Pot Shredded Beef Tacos. They are so simple to make, only take a few ingredients, and taste amazing! The beef is cooked in the slow cooker, which means at the end of the day all you have to do is gather your toppings, assemble the tacos, and eat. 🙂 Since it’s cooked all day in a salsa verde sauce, the beef is incredibly moist and full of flavor. It definitely falls apart as you shred it, and with all the juices in the crock pot it will even keep for awhile on  the “warm” setting without getting dried out.  We served our tacos in flour tortillas with plenty of cilantro, shredded cheese and sour cream – so good!! You could also use this meat for burritos or quesadillas, or even taco salads. I love that this recipe takes tacos to a new level – so simple, and so delicious. 🙂

Slow Cooker Chicken Tortilla Soup

It’s finally starting to warm up here, but it’s definitely still soup weather. We have soup at least once a week in the winter, and often I’m experimenting and trying new recipes. As soon as Mike tasted this slow cooker chicken tortilla soup he said “this is going on the blog, right?” I think that means it was a hit. 🙂

This recipe is truly “set it and forget it.” You dump everything into the crock pot, turn it on, and come back at dinner time. Quickly shred the chicken, stir it all up, and you’re good to go!  This is definitely a soup, not a chili, so don’t be surprised at the amount of broth. You can always leave some out if you want your soup a little thicker.  The poblano peppers add a great taste, but if you can’t find them, feel free to use green peppers, or even a jalapeno or serrano if you want a little extra spice. The soup has a great mild Mexican flavor, and even Zeke ate it by the spoonful. And of course, it doesn’t get much better than melted cheese on top and tortilla chips on the side. We loved this soup and hope you do too!

Slow Cooker Pork Loin with Apples and Cinnamon

In case you can’t tell, I absolutely love to cook and bake with apples.  Did you know that Michigan is actually the nation’s third largest producer of apples? We are certainly blessed with an abundance of apple orchards and fresh apples around here! I recently went on a trip with Michigan Apples and got to tour some of the local apple orchards and even a processing plant. It was incredibly interesting (and delicious), and I had a great time with some of my local blogging friends.

Crock Pot Salsa Verde Chicken Tacos

I’ve got another easy crock pot recipe to share with you today! These crock pot salsa verde chicken tacos are incredibly easy to make, and they taste delicious! I love recipes that involve dumping all the ingredients in a slow cooker and forgetting about them for a few hours. 🙂 In this dish, chicken is simmered with a variety of spices and plenty of salsa verde, making it nice and tender and full of flavor. We combined the chicken with some cheese and sour cream to make quick and easy chicken tacos, but this would be equally delicious over rice or used as the base for any number of Mexican dishes. I hope you like this one – it’s too easy not to give it a try! 🙂

Slow Cooker French Dip Sandwiches

These slow cooker french dip sandwiches make a great, easy (and somewhat healthy!) meal. Tender meat, crusty french bread, a little mozzarella cheese, and you can’t go wrong. And of course you can’t forget the component that makes a  french dip sandwich truly delicious – the flavorful sauce to dip it in! 🙂  I made this meal for my parents when I was visiting a while back, and everyone loved it. It’s simple, tasty and filling. Serve with a side salad and you’ve got a healthy, well-rounded meal. I definitely recommend serving the sandwiches on the baguette slices as suggested – we all agreed that the chewy, crusty bread was one of the best parts!

Slow Cooker Tex-Mex Chicken Stew

I have got a great crock pot recipe for you today! This slow cooker tex-mex chicken stew is so good. It’s very similar to chicken chili -similar enough that I served it with cheese on top and tortilla chips on the side. 🙂 The chicken was incredibly tender from being cooked in the crock pot all day, and the seasonings and spices made this soup very flavorful. It wasn’t overly spicy, which is just the way I like it, but you could easily increase the heat with an extra jalapeno or two. Overall this tex-mex chicken stew was well liked, and Mike said I can make it again anytime – a sure sign of success. 🙂

Crockpot Shredded Chicken Tacos with Cilantro and Lime

I have got a super easy slow cooker meal to share with you today! These crockpot shredded chicken tacos are so easy to throw together, and they taste great.

The addition of cilantro and lime adds a nice fresh flavor, and you can’t beat a crock pot meal that takes 5 minutes to prepare!

Everyone loves chicken tacos, and this easy recipe is sure to be a family favorite. Don’t forget to add all of your favorite taco toppings – these tacos would be perfect with extra cilantro, avocado, tomatoes, etc.

The recipe calls for a packet of taco seasoning, but if you often find those too salty, I would start with 1/2 or 3/4 of a packet and go from there. Or, of course, you could always make your own and add salt to taste. 🙂

No matter how you make it, I’m pretty sure these chicken tacos will be a hit!

This might be the easiest recipe I’ve ever posted on this blog, so no excuses for not trying this one! 🙂 These slow cooker honey barbecue chicken sandwiches are so simple to throw together and they taste amazing. Mike loves this meal and I find myself turning to it frequently when I’m trying to plan out weekly menus. It’s full of flavor and the meat is nice and tender. Basically you dump everything in the slow cooker, turn it on, and a few hours later you have dinner! Yes, it’s that easy. 🙂 Can I give you a tip though? The sandwiches taste even better if you serve them on homemade french bread rolls!

Pulled Pork Sandwiches with Ginger Lime Mayonnaise

I love pulled pork. It’s one of my favorite meals, and it doesn’t hurt that it’s so easy to make. I love trying different recipes, and you’ll actually find quite a few recipes for pulled pork on this blog. (Hawaiian Pulled Pork and Puerto Rican Pulled Pork are also great, just to name a few). You can never have too many versions of a good thing, though. 🙂 I found this recipe in the most recent Penzey’s catalog, and of course I had to try it. This pork is great for sandwiches. The seasonings give it a good amount of flavor, and the cooking liquid keeps it nice and moist. At the end of the cooking time, you remove the pork, shred it, and stir in just a little bit of the reserved liquid. I love this because it gives a little extra flavor, but the pork is just dry enough that it’s easy to eat as a sandwich. We loved these sandwiches with the ginger lime mayonnaise, but we also enjoyed the leftovers with a little bit of barbecue sauce on top. The recipe is very versatile and Mike and I both really liked this version of pulled pork – enough to eat it for dinner three days in a row! 🙂
