I’ve got a really fun giveaway for you today! Thanks to the United Dairy Industry of Michigan, a few weeks ago I got the chance to tour SwissLane Dairy Farms. I joined a group of local bloggers and had a blast checking out the beautiful countryside, saying hello to the cows, and meeting and talking with 4th generation owner Annie Link. The farm was founded in 1915 and now has around 2000 cows that are milked daily. It was really cool to see how things are run on a modern dairy farm, and especially to be reassured that even in a fairly large operation like this one, the cows are very well taken care of. Everyone we met from the Oesch family (the original founders) had a huge sense of pride in their farm and it was so fun to take a tour and hear more about Michigan’s dairy industry. Β We even got to go on a hayride and bottle feed some baby calves, a definite highlight!

After the tour we were treated to a wonderful lunch of warm soup and paninis hot off the panini press. Is it bad if I say that was my favorite part? πŸ™‚ We were encouraged to build our own paninis and they had some wonderful options set out for us. I had a turkey, brie, and raspberry jam panini and I am seriously still thinking about how good it was! And of course we had milk as well, set out in the cutest little milk bottles.

I’m partial to having an Italian style panini that would include pavalone cheese, salami, prosciutto ham, and a smashed meatball w sauce. All this on an Italian roll.   38. I made a panini once that was absolutely fantastic — it had grilled sliced chicken, bacon, tomato, red onion, and an avocado smash/spread. (I think that was all that was on it? I can’t remember for sure). It was SO GOOD. My panini maker died though so I haven’t made it since.

  59. Oh I so love Panini, I think my ultimate dream Panini would be, Chicken breast that was marinated in Italian dressing, then pounded extremely flat. Grill the chicken breast about 3 minutes on each side. Slice some heavy texture country Italian bread, and slightly coat each piece with a rich honey-butter. Slice a good provolone cheese about a 1/4 inch thick. Layer your bread, a slab of your grilled chicken, your slice of cheese sprinkled with a good Tuscany seasoning, cover with baby spinach leaves and diced heirloom tomatoes mixed with a tsp of Ranch dressing, another slab of chicken and top with your final slice of bread.
