Baked Pineapple

This is possibly the perfect Easter side dish. I suppose if I was an “on the ball” food blogger, I would have made this in advance, posted it sometime in the weeks leading up to Easter, and encouraged you all to make it for your family get togethers. Instead I found myself hurriedly throwing this together on Easter morning, with barely enough time to snap a few pictures before rushing out the door. (Sorry for the poor photo quality.) Good thing it’s so simple.

This really is the perfect accompaniment to a ham dinner. Warm, sweet pineapple flavored with cinnamon (and a little extra sugar).  It’s a family tradition that I’ve managed to incorporate into Mike’s family as well. Everyone loved it and I got multiple requests for the recipe (another reason to have your blog post up before Easter). It’s incredibly quick to make, with a long baking time that gives you a little down time while it’s just hanging out in the oven.  I’ve made this plenty of times and have yet to meet someone who doesn’t love it!

Baked Pineapple

Ingredients:

1 (20 oz) can crushed pineapple, juice and all
1 cup sugar
2 Tbsp cornstarch
2 eggs, beaten
1 tsp vanilla

Directions:

Mix all ingredients together. Pour into greased casserole. (A 2qt casserole or 8x8 pan works great.) Sprinkle with cinnamon and dot with butter. Bake without lid at 350 for 1 hour.

We make something similar to this dish, except we don't add eggs, and top the dish with a tube of crushed Ritz crackers drizzled with melted butter (1/2 cup). Like the egg-custard effect though… *Ü*

  22. Hi Megan. I really like your blog! I tried this recipe, and as I was making it, I was sure it needed to have flour, but double-checked the ingredients and didn’t see flour there. It came out like a pineapple sauce–still tastes good, but I’m thinking you meant to put flour in the ingredients?

    • Hi Rachel, thanks for the comment. I double checked and the recipe is correct as written. It should be a little thicker and a little more held together than apple sauce, but you definitely have to scoop it out, not cut it. I’m glad it tasted good, even if it wasn’t what you expected! 🙂

  23. Hey Megan, this looks delicious! I a huge fan of fresh pineapple, I always buys some from the farmer’s market when it’s in season. I hope to make this sometime during the next week and I was wondering if I could omit the sugar, as I find canned pineapple sweet enough already.

    • Hi Holly. This is a very sweet dessert/side dish. I definitely think you could cut down on the sugar, but I’m not entirely sure about leaaving it out. I would start by cutting down, maybe even by half, to see how it goes. If you try it, I hope you’ll let me know how it turns out!

  24. I made this for our Easter dinner and our guests loved it (as did I). My hubby didn’t, but he doesn’t like pineapple. 🙂 I used only half a cup of sugar and still thought it was sweet enough. Great recipe, Megan!
