Confessions

1. The same week I wrote a post about freezing buttermilk so it doesn’t go to waste I let a whole container go bad in my refrigerator.

2. Last week I told Mike that I was making bisquick biscuits for dinner instead of homemade and he cheered. Yes, cheered. I think a side-by-side taste test is in order so he doesn’t make that mistake again.

3. Whenever I haven’t planned very well for dinner I tell Mike:  “I don’t have any food for you tonight, figure out something to eat.” Inevitably I feel guilty and make him eggs. We have eaten a lot of eggs recently.

4. I have made a great new tilapia recipe three times now and have yet to take a picture for the blog. Pure laziness and terrible evening light are to blame.

5. Last weekend, while visiting Katie, my mom and I made lasagna and meatballs. And by “my mom and I”, I really mean that my mom did most of the work. My contributions included mixing the filling for lasagna and telling her that her meatballs would not all fit on one baking sheet.

  1. Megan, thank you for this!!! I have some buttermilk in my fridge as we speak. I know I can and should freeze it…….will I? Who knows (Sigh…). This was funny and please realize you are not alone!!!!! :o)

  5. I totally agree, confessions are a great read. Makes us feel that much closer to those deities that take gorgeous photos of their food and other stuff… but dont worry, I'm sure all of us have fallen into the do-as-I-say-not-as-I-do trap. I know I have! (Looking at you, nearly sentient cabbage!)

  7. I think buttermilk doesn't go bad….it is already “soured” to begin with. It has an extremely long shelf life, long after the date on the carton. Next time don't throw it out!!!!

  8. These made me laugh.. I think that many people think food bloggers are perfect chefs and perfect planners 24/7.. however, I'm with you. My go-to dinners when things don't work out include mac+cheese, quesadillas, or egg sandwiches. 🙂

  9. My go to dinner when I have nothing planned or we get in too late is eggs. Glad I'm not the only one. Last night I made the Unstuffed Peppers, it was great! But I have to tell you I am living on your Turkey Chilli and have handed out the receipe to several friends. It's just so easy and so yummy!

  10. I told you on twitter, my confession is I love Rice-a-Roni rice pilaf…I know my brother would give me a hard time! 🙂 I started using buttermilk powder which you store in the fridge since I let so much buttermilk go to waste in the paste. It works just fine for my baking and cooking.

  14. I love confessions! Have you seen what I put up today? I confessed that I have a fear of frying! But, I finally made some really good Fried Chicken Nuggets and guess what- my family cheered. They never get anything fried around here. They never cheer over my salads or soups. Can't wait to see you in May!

  24. Your buttermilk confession reminded me…when I read your hint about freezing it, I did just that with 2/3 of the carton in my fridge. My mom, who lives with us, saw it in the freezer. She thought she was having flashbacks to breastfeeding days with the frozen milk!!! We had a great laugh about that!!!

  25. Your husband cheering made me laugh. It also made me think that sometimes we (and be we I mean I!) sometimes overplan and over-complicate dinner. It's okay to rely on the simple things sometimes! When I make cheesy scrambled eggs and he raves and moans more than the dinner that took me 2 hours the night before, I think that I probably can lay off the slaving in the kitchen just a little bit sometimes. 🙂

  26. So funny. There are days when I marvel at the fact that I have nothing in the refrigerator to give my kids for lunch, yet I've got lots of homemade butter…or whatever else I happen to be doing for the blog!

  27. Hoe funny, after your post on buttermilk, I ran out and bought some. I never did freeze it and it went bad. I'm so lazy. But next time I buy iy, I can assure you I will freeze it and not waste it. The meatballs look dang good girl!
