Classic Buttermilk Pancakes

I can’t believe I haven’t shared this pancake recipe before now! We absolutely love pancakes in this house and these classic buttermilk pancakes are our favorite. These are the pancakes I grew up eating. My mom has made this exact recipe for as long as I can remember and in my mind, these are just what pancakes should taste like. I’ve often done the milk/vinegar substitution for the buttermilk, and they taste great, but real buttermilk will make them extra fluffy. I have to admit that Mike actually loves Bisquick pancakes, but I’m happy to report that these buttermilk pancakes beat out Bisquick every time 🙂

Classic Buttermilk Pancakes

Ingredients:

1 egg
1 cup buttermilk
2 Tbsp canola oil
1 cup all-purpose flour
1 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Directions:

Beat the egg in a medium sized bowl. Add remaining ingredients in the order listed and beat until smooth. Grease your griddle and heat on medium high heat. To test the griddle, sprinkle with a few drops of water. If bubble skitter around, the heat is right. Pour batter onto the hot griddle. Flip the pancakes as soon as they are puffed and full of bubbles. Cook until both sides are golden brown. You may have to adjust the heat on the second batch to keep them from burning.

  1. There’s nothing like a classic, homemade pancake. Reminds me of saturday mornings when i was little. i’ve never done the milk/vinegar sub for buttermilk, but i have tried lemon juice/milk which worked. however, i don’t think anything can replace buttermilk in pancakes! great recipe megan!

  5. Hmmmmm, I may be able to give up the Trader Joe’s mix I’ve been using…I love fluffy panckaes! Do you buy buttermilk? I think I’ve seen it in the dairy section but was never sure if I would use it all in time.

    • Yes, I usually buy buttermilk. In my grocery store it is with the cream and half and half. You can freeze it if you don’t use it all, or use it to make biscuits, baked oatmeal, waffles, cupcakes, etc – there are so many uses 🙂

  6. This looks like a good one! We eat buttermilk pancakes at least once a week here. You just can’t beat homemade buttermilk pancakes. I just started making lemon syrup to go on top of them, which is my new favorite thing EVER. Also great with fresh strawberries!! (I have a recipe for the syrup on my Facebook page.)

  12. did anyone actually try the recipe? Mine were runny and didn’t rise. I used buttermilk powder that was old but not that old. Oops didn’t wait long enough. They are doing ok now. Used slightly more flour to give thicker batter and some vanilla . Still pretty thin for pancake. Have to check the bs bp milk ,,.,,.ratio in the betty Crocker cookbook. Not bad…10 year old says awesome..but could be maple syrup and butter talking

    • I’ve never actually used buttermilk powder, so I’m not sure about that part. I will say that when I use actual buttermilk rather than some kind of substitute (I usually do a plain yogurt/milk mixture as my sub), they turn out better and thicker. Maybe try regular buttermilk next time?
