Make-Ahead Sausage Egg Breakfast Bake

If you are looking for the perfect breakfast casserole for the upcoming holidays, I have the perfect recipe to share with you! I first made this sausage and egg breakfast bake last Christmas (yes, a full 11 months ago!) and I’m so sorry it has taken this long to share it with you. However I was determined to get it to you in time for you to make it for Christmas this year. 🙂

As you can tell by the name, this make-ahead sausage egg breakfast bake is assembled the night before, so all you need to do on a busy morning is stick it in the oven. All the hard work is already over by the time you wake up in the morning. That’s my kind of breakfast!

Banana Bread Baked Oatmeal

You are going to love this banana bread baked oatmeal! This is my new favorite oatmeal recipe, and even better, my kids all love it too!

We’ve had a little trouble finding oatmeal at the store lately, and I was starting to get anxious as my oatmeal supply dwindled down. The kids love plain oatmeal for breakfast, but a lot of times we have some form of baked oatmeal for lunch or even as a breakfast-for-dinner option. Thankfully I finally found oatmeal at Aldi, and to celebrate, we had this banana bread baked oatmeal for dinner!

This oatmeal is incredibly easy to make and doesn’t take long at all from start to finish.  It’s fairly healthy since it’s mainly made of oatmeal and bananas, and it makes your house smell like banana bread as it’s baking! I cut down the sugar a little without anyone noticing, but if you like your oatmeal extra sweet, feel free to add in a little extra. So often it feels like baked oatmeal is more like a dessert than a breakfast, but this is one recipe I definitely feel OK about eating for breakfast (and letting the kids eat as much of it as they wanted!)

We love breakfast foods around here. If I’m ever stumped about what to make for dinner, Zeke is the first to suggest breakfast for dinner. We have our old favorites (buttermilk waffles, classic pancakes, baked oatmeal), but this German pancake has quickly become a new family favorite!

You will love this simple popover recipe! They are perfectly light and delicious, and so easy to make.

Popovers are hollow rolls / biscuits made with an egg batter. They puff up in the oven and become airy and crispy and delicious. They are called popovers because they “pop over” the sides of the pan as they bake. And yes, I had to look that up after Zeke asked why they are called popovers. 🙂

I’ve been wanting to try making popovers at home for years now. I can’t believe it took me this long to get around to it because it turns out they are so simple to make! And they are so good that we now have a new weekend tradition.

A few years ago Mike and I took a kid-free vacation to Bar Harbor, Maine and Acadia National Park. We had a great time hiking, biking, and exploring, but one of the things I most remember from the trip is the amazing food we had. I’m pretty sure we had some form of lobster for almost every meal! After the lobster, however, the food we most enjoyed was the famous popovers from the Jordan Pond House.

Jordan Pond House is a cute little tea shop in the middle of the park. They are famous for their popovers (look how big they are!), so of course we had to try one! We definitely enjoyed our popovers (with butter and strawberry jam!), and I came home wanting to try to make popovers at home. It took me a few years, but I’m glad to report that it’s super easy to make delicious popovers in your own kitchen!

I love that you don’t need a special popover pan to make these. All you need is a normal muffin pan and a few simple ingredients. We ate these fresh out of the oven with butter and strawberry jam, and they were absolutely delicious! Seriously, we couldn’t stop eating them and I already made them again this weekend. Best of all, they aren’t unhealthy, so I don’t even feel bad feeding them to the kids! All 3 boys loved these, and Emma looked on sadly because she isn’t old enough to eat real food yet. 🙂

Please give these a try – they have already become a new weekend tradition!

Oatmeal Cookie Granola Bars

We love homemade granola bars around here, and these oatmeal cookie granola bars are no exception! After all, how can you go wrong with “oatmeal cookie” in the name?? 🙂

Oatmeal cookies are some of my favorite cookies – especially soft and chewy ones. Because of that, when I saw these granola bars, I knew I had to try them. These granola bars really do taste like oatmeal chocolate chip cookies, but they are a little bit healthier. 😉

These granola bars are perfectly soft and chewy – just like a delicious oatmeal cookie. They stay fresh on the counter top for days, or in the freezer for months. I made some before Emma was born and they’ve been perfect as on-the-go snacks for me or the kids.

Oatmeal Cookie Granola Bars

They are made with whole wheat flour, coconut oil and almond butter so they are wholesome and filling. And absolutely delicious. 🙂 And it’s super easy to double the recipe and make a giant batch to freeze for later.

I used almond butter in these because Levi has a peanut allergy, but I’m guessing peanut butter or another nut butter would work just as well. If you wanted them to be a little healthier you could substitute raisins for the chocolate chips, but I haven’t tried that yet. The chocolate chip version is just too good!

I hope you try these granola bars. After all, who doesn’t like eating cookies for breakfast? 🙂

Coconut Oil Trail Mix Granola

It’s been awhile since I posted a homemade granola recipe, and I have no idea why it took me so long! I love to make granola at home. I love mixing and matching the ingredients, playing around with different oils and sweeteners, and of course adding lots of different add-ins!

This coconut oil trail mix granola is definitely a new favorite. It breaks up into nice big chunks, and it is chewy and crunchy all at the same time. Plus it uses nice healthy ingredients, so you feel good about eating it!

The granola starts with rolled oats and coconut oil as the base. The original recipe called for honey as the sweetener, but I didn’t have enough, so I did about 2/3 honey and 1/3 maple syrup. It was so good that now I can’t imagine making it any other way. 🙂

Coconut Oil Trail Mix Granola

After you bake the granola, you let it cool for an hour or so. This is key to getting those nice big chewy clumps of granola. Then it’s time to add in your mix-ins. I wanted to do sunflower seeds and pumpkin seeds so that Levi could eat it (he has a peanut allergy), but I couldn’t find any on a recent trip to the store.

Instead I stuck with the basics – slivered almonds, lots of dried fruit, and a handful of dark chocolate chips. Yum!! Feel free to play around with the mix-ins – there are so many options available!

This granola is delicious when eaten by the handful, as cereal, mixed into yogurt, on top of ice cream, etc. I think you get the idea. 🙂 You are going to love it!

Pumpkin Spice Baked Oatmeal

Are you tired of pumpkin spice yet? I hope not, because you’ve got to try this pumpkin spice baked oatmeal! We love baked oatmeal in our house. It’s a hot breakfast that is easy to make and that everyone will eat without complaint. 🙂 Plus I love that you can make it ahead of time and then get other stuff done while breakfast is baking in the oven.

This baked oatmeal is full of fall flavor and has a great cake-like texture. You can definitely taste the pumpkin, but it isn’t overpowering. It isn’t overly sweet, which makes it perfect for breakfast. We like to eat it crumbled up with milk, but I’ve heard it’s good with whipped cream on top as well. 😉

I love having a hot breakfast as the mornings get cooler, and this is a great fall breakfast option. And it’s very kid-friendly!

These soft pumpkin cinnamon rolls are filled with a fall flavored cinnamon spice mixture and topped with a vanilla glaze!

Pumpkin Cinnamon Rolls

How has it taken me so long to make pumpkin cinnamon rolls? We love pretty much anything made with pumpkin, and of course we love cinnamon rolls, so it was really just a matter of time before I combined them. 🙂

These pumpkin cinnamon rolls ridiculously good. They are soft and fluffy and gooey and delicious, just like traditional cinnamon rolls!

Unlike traditional cinnamon rolls, however, they are made with pumpkin, which makes them extra soft and delicious. And they have lots of extra fall spices (like nutmeg and cloves!) all rolled up in their delicious gooey centers. 🙂

Then they are topped with a sweet and creamy cinnamon icing! Even just typing up this blog post makes me want to eat another one, that’s how good they are. 🙂

Long story short, if you like pumpkin and you like cinnamon rolls you are sure to LOVE these. They are the perfect fall breakfast treat!

We all loved baked oatmeal around here, and this new recipe was no exception. The oatmeal was perfectly sweet without being overpowering, and the texture is soft and crumbly and almost cake-like. An easy granola recipe full of peanut butter flavor and dark chocolate chips!

Peanut Butter Dark Chocolate Granola

I have been on a homemade granola kick recently – we can’t get enough of it! I almost always make my tried and true crunchy granola recipe, but a few weeks ago I decided to try a new recipe for peanut butter dark chocolate granola. And wow was it good! We are obsessed with this granola. I managed to cut the sugar down slightly and sub out some less than healthy ingredients for healthier ones, which means that while this is a sweet treat, you don’t need to feel totally guilty about eating it. 🙂

This peanut butter dark chocolate granola is just about perfect. It’s crunchy and chewy and  sweet and delicious. The dark chocolate chips add just the right amount of chocolate in each bite, and when you bake it, the granola settles into these delicious chewy clumps that I can’t get enough of. I’ve been eating a few spoonfulls on top of yogurt for breakfast and it’s my new favorite breakfast. Best of all, you can easily customize this to add in some nuts or dried fruit, or whatever it is you like to eat in your granola. I hope you try this one – it’s addicting!
