Margarita Pizza

I wrote about this pizza a long time ago, but it’s so good I really think it needs a new post (and some updated pictures…if you click back to the old post, please don’t laugh). We love this pizza. Love it.

In the summer, when fresh tomatoes and basil are plentiful, we eat it once a week. It’s easily one of our favorite meals, and when Mike asks what’s for dinner, an answer of “margarita pizza” puts a huge smile on his face. He also gave it a 4.75 rating, one of his highest ever.

Now that I’ve talked it up so much, I’m almost embarrassed to tell you how simple it is. All you need is a few ingredients and approximately 25 minutes, and you have a delicious pizza dinner. You can make your own pizza crust, or use a store-bought mix – this pizza is good no matter how you make it! I must, however, recommend my favorite pizza crust recipe ever: perfect homemade pizza crust.

Ingredients:

  • 1 unbaked pizza crust (1/2 of this recipe)
  • 1-2 Tbsp olive oil
  • 1 large Garlic clove, smashed
  • 2 large fresh tomatoes, thinly sliced (or 3-4 roma tomatoes)
  • Mozzarella cheese
  • 10 leaves fresh Basil, torn (you can substitute dried basil but it's not quite as good)
  • Salt and pepper

Directions:

  1. Prepare pizza dough according to the directions.
  2. Place olive oil and garlic in a microwave safe container and microwave for 30 seconds, then allow it to sit for 5 minutes.
  3. Roll out the pizza crust and brush with garlic oil.
  4. Place tomatoes in a single layer on the crust, then top with cheese and basil.
  5. Sprinkle salt and pepper over the whole thing and bake according to the pizza crust directions.

  6. I LOVE your pizza recipe, Megan! I make it at least once a week. I haven't tried microwaving the garlic and oil though. Does that boost the flavor of the oil? Hmm… I'll have to try it. I love making this with fresh mozzarella cheese too. Yum. Thanks for all of your great recipes!

  10. andrea – thanks for the comment! haha after having pizza at your house, I think you make it better than I do! I think that heating the garlic/oil just kind of infuses the garlic flavor into the oil. Then I just brush the oil over the crust. Not sure how much of a difference it makes, but it works so I do it. I'm convinced the real secret of this pizza is the salt and pepper on top. 🙂
