Simply Suppers Cookbook Giveaway!
If you read my turkey burger post, you may have noticed the disclaimer at the bottom that I received the cookbook from Thomas Nelson publishers. Well, good news – they are also letting me give three cookbooks away! The cookbook is called Simply Suppers, and, from the publishers description, is a “collection of comfort foods that can be prepared in 30 minutes or less.”
So far, the turkey burgers are the only thing I’ve made from the cookbook, but I’ve got quite a few more recipes bookmarked to try. The Peanut Butter Cup Tart in particular is calling my name! The recipes all appear to be fairly simple and quick to make, and definitely fulfill the claim of comfort food. I love the variety of recipes, and while there are a few recipes that don’t appeal to me (corn chowder will never appear on my dinner table), I really do want to make most of the recipes in the book. The cookbook seems to focus on classic recipes that are dinnertime staples, and it seems like it was made for busy moms or wives who try to get a homecooked meal on the table as often as possible, but don’t always have a lot of time. This is down home cooking with quick prep time. Based on my husband’s review of the turkey burgers, the cookbook is “husband-friendly” as well. Best of all, there are beautiful photos of the recipes to show you what the finished dish should look like!

I love making pesto chicken . Just put chicken breasts in a dish, top with pesto and slices of provolone cheese. Bake for 40 -45 min and dinner. So simple . And all 4 of my children love it!

I follow you on facebook! My favorite fast meal is like a goulash. I just take whatever ground meat I have handy (turkey, chicken or beef – could even be leftover taco meat or roast) I add that to a pot of cooked macaroni noodles then add whatever I feel like – usually a can of diced tomatoes with basil & onions. A little tomato paste and some chili powder. Sometimes I add some leftover spaghetti sauce if I have it or even some black beans. You can add a little shredded cheddar and viola – that was really quick and filling!

My favorite comfort meal is a baked potato bar. I also make this to take to someone following surgery or having a new baby. Much of the prep can be done ahead of time and I can get creative with the toppings.

My simple suppers usually consist of stuff like this: sautee onions, tomatoes and garlic until perfect – leave them chunky. Pour tomatoes and all their juices over thinly sliced zucchini and smother in fresh mozzarella cheese. Bake and serve with pasta which has been sauteed in garlicky olive oil. I made this just this week in fact!

I'm single so I don't really worry about cooking for a family, but my favorite simple supper is taking one night to make a whole batch of turkey meatballs and freezing them, then when I need something comforting but quick, I bake what I want in the oven then toss them with fresh tomatoes, basil, and whole wheat pasta!

in the summer, simple supper is burgers on the grill. plain ol' beef burgers with a slice of american cheese (clearfield is my brand of choice) on a bun. it just tastes like summer. mmmm. This sounds great — I am all about both simple and comfort food! We cook very little at home that doesn't in some way involve prepackaging. But sister sent us some great frozen fish from Alaska, so we've been trying to branch out with fish fillets.
