Chewy Peanut Butter Brownies

I’m pretty sure I’ve become addicted to these chewy peanut butter brownies. I made them 3 times in a one week time period! To be completely honest though, they weren’t all for us. πŸ™‚ I made one batch for Mike’s work, only to discover after I’d put them in the oven that I’d forgotten the baking powder! I quickly mixed up another batch (they are so simple to throw together!) and put them in the oven next to the baking powder-less batch. It turns out that both versions turned out great, so we had double the brownies on hand. Yum! Then, we liked them so much and they were so simple that I ended up baking them again over the weekend to take to a family in our church.

If you need a quick and easy dessert, this one is for you. They take about 5 minutes to mix up, use ingredients that you almost always have on hand, andΒ they taste incredible. These peanut butter brownies are soft and gooey, full of peanut butter flavor and are filled with melty chocolate chips. I can’t get enough of them! Mike is not a huge fan of peanut butter desserts (crazy!), but even he said these were good. So what are you waiting for? Chewy Peanut Butter Brownies

Chewy Peanut Butter Brownies

Ingredients:

1/2 cup peanut butter
1/3 cup butter, softened
2/3 cup granulated sugar
1/2 cup packed brown sugar
1 tsp vanilla
1 egg
1 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1 1/2 cups semi-sweet chocolate chips

Directions:

Preheat the oven to 350. Grease a 9x9 pan and set aside.

In a medium bowl, cream together the peanut butter and butter. Add the sugars and vanilla and beat until creamy. Beat in the egg and beat until light and fluffy. Add the flour, baking powder and salt and beat until just combined. Stir in the chips.

Spread the batter in the prepared pan and bake at 350 for 25-30 minutes, or until golden brown and a toothpick inserted in the center comes out with moist crumbs. Allow to cool completely before cutting into squares.

  2. I just made your other recipe for Chocolate Chip PB Bars and everyone fell in love. But besides the different recipe, what is the difference between these and those bars?

    • Sadly, it has been so long since I’ve made the other PB bars I’m not entirely sure how to answer you! That is the down side of making so many new recipes. I love those other ones, and these are fairly similar. These are a little thinner, and I think maybe a little gooey-ier (is that word?). Also, these feel a little more “homemade” since they don’t include bisquick. Honestly I love both of them, so I’d say try these and let me know what you think. πŸ™‚

    • I think almond butter, or even a natural peanut butter has a different consistency so I’m not positive how they would turn out. Plus I think almond butter is less sweet? Let me know if you try it though, I’d love to know how they turn out! πŸ™‚

  12. Would a double batch fit in a 9 x 13 pan? Same baking time?

    • Yes a double batch will work great in a 9×13 pan. I haven’t tried it, but someone else commented that they took about 30 minutes. Just keep checking them and take them out once they are golden and a toothpick comes out clean. I hope you like them! πŸ™‚

  20. Just wanted to say that I spotted this recipe and had to try it. Everyone loved them! My Mom kept sneaking back into the kitchen for another one, and this recipe is definitely a keeper. The chewiness and carmelly, peanutty flavor was excellent. I did tweak it a bit to suit our high altitude, and I also added half a cup of shredded coconut, which was a nice addition.   23. I am a sweets lover and had to try to make these. They are baking now. But, the texture did come out more like fudge. Is that right? I double checked ingredients to be certain it was right. I’ve never made homemade chewy brownies, so I have no clue! πŸ™‚ Thanks for sharing!

    • The texture of mine was soft and chewy, not really like fudge. You mentioned they were baking when you left your comment – so did you mean the batter texture was like fudge? How did they turn out after baking? I hope you ended up liking them πŸ™‚

  24. I came across this recipe on Pinterest and just made them tonight for a big group. Everyone LOVED them! I doubled the recipe and baked them on a 15×11 cookie sheet which I was able to cut into 30 pieces. I only had 1 egg left so I added 3 tbs of mayonnaise as a substitute for the 2nd egg. They were so peanut buttery, chewy, moist, and yummy! Thank you!

    • Unfortunately I don’t – I try not to think about it haha. If you put all the ingredients into a calorie counting website though, that would be able to tell you.

  26. megan, just wanted to let you know that these are a favorite of mine. another batch is in the oven right now…i usually don’t remake recipes, but when i realized that you only posted them in 2012 that clued me in to how good they are if i’m remaking them again less than a year later. πŸ™‚ this time i subbed in dark chocolate chips & peanut butter chips…can’t wait to have one tonight!!
