Gingerbread Pancakes

Gingerbread PancakesI just realized I’ve posted 3 breakfast recipes in a row. I must have Christmas brunch on my mind! And since I’m thinking of it, if you’re looking for a delicious recipe for Christmas morning, you should definitely keep this one in mind. It combines classic pancakes with traditional gingerbread flavor -perfect for Christmas! Mike and I both really liked these. I’m more of a gingerbread fan than he is, but he voted them a 3.5 and ate enough of them to convince me that he liked them. They’re light and fluffy with a nice subtle flavor. I’ve already made them twice, and I’m wondering if I can fit them in again before Christmas. πŸ™‚

Gingerbread Pancakes

Ingredients:

1-Β½ cup All-purpose Flour
Β½ cups Packed Dark Brown Sugar
Β½ Tablespoons Baking Powder
ΒΎ teaspoons Baking Soda
Β½ teaspoons Salt
Β½ teaspoons Ground Cinnamon
Β½ teaspoons Ground Ginger
β…› teaspoons Ground Nutmeg
ΒΌ teaspoons Ground Cloves
Β½ cups Water
Β½ cups Brewed Coffee, Room Temperature Or Cold
2 whole Large Eggs
ΒΌ cups (1/2 Stick) Melted, Cooled Butter
β…› cups Freshly Squeezed Lemon Juice

Directions:

Whisk together flour, brown sugar, baking powder, baking soda, salt, and spices in a bowl. Whisk together water, coffee, eggs, butter, and lemon juice in a large bowl. Add flour mixture and whisk until just combined. Let stand 15 minutes (batter will thicken).

Brush a griddle or 12-inch non-stick skillet with oil and butter, heat over moderate heat until hot but not smoking.

Working in batches of 3 or 4, pour 1/4 cup batter per pancake onto hot griddle and cook until bubbles appear on surface and undersides are lightly browned, 1 to 2 minutes. Flip pancakes with a spatula and cook until cooked through and edges are lightly browned, 1 to 2 minutes more. Transfer to a platter and loosely cover with foil to keep warm. Brush griddle with oil between batches.

  10. We're HUGE pancake fans over here. These look fantastic. I actually think these in combo with the graham cracker pancakes I made last week would be AMAZING. Cookies for breakfast πŸ™‚

  13. Oh, I love gingerbread pancakes! Your post reminded me of how wonderful they are. We serve ours with a homemade buttermilk syrup (sounds disgusting, but it's out of this world) and they are to die for! Thanks for the post!

  15. I made these pancakes when I was staying with my family this Christmas. I didn't tell my sisters they were gingerbread because I thought it might scare them off. They were concerned with the brown color, thinking I may have smuggled in wheat flour, but I told them it was the cinnamon. Everyone loved them and we saved the extras in the fridge and reheated them for several days afterwards. This was a great Christmas recipe and I will make it again!

  17. I made these this morning! Amazing. But I think next time I make them they'll have more of the spices; I ended up putting a spice mixture as a topping along with applesauce and syrup.

  20. Hi Megan. These are my favorite, go to gingerbread pancakes, the best I’ve found. I put my recipe card in a plastic sleeve since I make them so often and can find the recipe easily. I make them with half wheat flour and top with pure maple syrup, yummy! Thanks for the great recipe πŸ™‚
