Crockpot Taco Chicken

I had no idea this would be so good. I decided to make it spur of the moment because I happened to have the ingredients in the house and it seemed so easy. Even though I heard great things about it, I was still skeptical: salsa, cream of mushroom soup, and sour cream – how in the world could that make something that I would even remotely want to eat? But it did. Not only did we eat it, but after our first bite, Mike and I both looked at each other and said “wow, this is good!”. I’m not really sure how you’re supposed to serve it. I’ve seen it served over rice, but that didn’t seem quite right to me. I think it would be great on a tortilla with some cheese, kind of like a chicken taco. We didn’t have any tortillas, so we used it as a dip for tortilla chips. Not the healthiest dinner, but it sure was good. This would be a great party food/appetizer – keep the dip warm in a small crockpot, and serve with some chips, vegetables etc. The possibilities are endless. 🙂

Crockpot Taco Chicken

Ingredients:

1 pound boneless skinless chicken breasts
1 can cream of mushroom or cream of chicken soup
1 cup salsa
1/2-3/4 package taco seasoning
1 cup sour cream

Directions:

Put chicken, soup, and salsa in slow cooker. Sprinkle taco seasoning over everything. Cook on low for 6 hours. Shred the chicken. Stir in sour cream and heat just until everything is combined.

*I'm guessing this meal is easily adaptable. I didn't have the right amount of anything, so I just eyeballed everything and it turned out great!

  7. What about a "lasagna"? You could layer round tortillas in a pan with this inbetween, cheese, olives, cilanto, fresh tomats & bake till bubbly. Looks delicious!

  18. I'd be tempted to double this and, after shredding the chicken and before adding sour cream, divide it into quart bags and freeze. I'd defrost and reheat this as burrito filling, with some cheese and green onions.

I know you said you werent sure how to serve it, so a few suggestions…she made homemade taco shells out of flour tortillas and baked them in the oven! Turned out great! We also suggested serving it over rice and I was even thinking on a tostada shell. Thanks for the recipe! I am making it this weekend! Cant wait! : )

  22. I've made something similar and it's delish. You simply combine a few chicken breasts, a block of cream cheese (even fat free is good), and enough salsa to cover it. Cook in the crock pot. YUMMY! It freezes really well, too. It's great with chips (as you served it), over rice, or on a tortilla with refried beans and cheese.

    By the way, I just found your blog (thanks to Tasty Kitchen). All of your recipes look so good! I can't wait to try some. =)

  25. Making a version of this with things in the fridge I had to use up- I hope it turns out as I didn't have the exact ingredients. I used 1 lb chicken breast, 1 can fat free cream of mushroom (it was all I had in the cupboard) 1 can black beans, 1 onion, 4 cloves garlic, 1 yellow bell pepper, some hot sauce as I didn't have any salsa, and the taco seasoning. Thanks for the idea, I hope mine isn't a flop. 🙂

  27. i made this over the weekend for my parents. it got gobbled up with celery and tortilla chips.

    looking for a broader application than an appetizer at a party, i swapped the cream of for some chicken stock and added some veggies to make it a soup. it’s delicious… a bit spicier than the dip, but delicious. 🙂 thanks for sharing!
