Hospitality: A Weekend Mexican Fiesta

If you tried to leave a comment on my blog earlier, you may have noticed that blogger was down. Sorry about that! It’s back up now, but in the process it seems to have claimed my most recent recipe draft. In the meantime, enjoy this belated hospitality post! 🙂

It’s been awhile since my last hospitality post, but I’ve finally got another one ready for you. I’ve actually been succeeding at my goal of having company for dinner once a month, but a few of those months weren’t quite blog worthy. The meal I’m sharing today, however, was certainly blog worthy. In fact, I’ve already blogged about all the components of it! 🙂

This is a great weekend meal for company. It takes a little bit of effort, but it’s totally worth it. And actually, you can make it as time intensive or as quick as you’d like just by altering a few components.  The main course needs to cook for a few hours on its own, which leaves plenty of down-time. I have made a version of this meal twice now for two different sets of friends, and both times it got rave reviews. Like sitting around the table eating leftover meat straight out of the pot types of reviews. Enjoy!

I served this with a roasted corn and pepper side dish, but I wasn’t crazy about it so it never made the blog. Next time I will probably just do a simple side salad, or some cut up vegetables. For dessert, I made a mystery cake, and our guests had a good time trying to guess what the mystery ingredient was. At least until someone pulled out an iPhone and checked my blog post for the answer. 

I guarantee you will get many wonderful compliments on this meal. Guests always seem to be impressed when you make homemade versions of store-bought foods like tortillas and salsa. However, if the amount of work for one meal seems daunting, just use their store-bought counterparts. The meal will still be delicious, and it will be much less work. As I’ve been learning, hospitality isn’t about impressing your guests with your amazing cooking. I love to cook and bake, so I get great enjoyment out of trying new and elaborate dishes, but in the end it doesn’t matter whether you make homemade tortillas or order pizza.  It’s the act of opening your home and your life and inviting friends (and strangers) inside that really counts.

  5. Megan, what a lovely post. The meal looks amazing but it's so nice to hear a foodie blogger say “it's about having people over, not what you make”. I think sometimes I DON'T have people over enough because I worry about this kind of stuff.

  6. I am really impressed by your commitment to have people for dinner on a regular basis. You have inspired me to do more of that. Life just gets so busy sometimes, we forget how important a meal with friends can be. I have bookmarked the recipe for that bread!!
