Peanut Butter Chocolate Chip Bars

I’ve been staring at the pictures in this post for longer than I’d care to admit, trying to figure out what to write that will convince you to make these bars. The only thing running through my head is: “They’re soooo good!” And while that is true, and a definite reason you should make them, that one phrase does not constitute a blog post.  And so I have to fall back on telling you how easy they are to make. How incredibly soft and chewy they are. And how I couldn’t stop eating them. Actually, let’s not talk about that last one.

These peanut butter chocolate chip bars definitely fall into the category of a dessert that is ridiculously easy to make, but tastes absolutely incredible. A coworker brought them into work one day and after tasting them I immediately begged her for the recipe. I’ve made them twice so far, with rave reviews each time. Seriously, this is one of those bars (cookies?) that makes people take one bite, turn to you in pure happiness, and say: “This is soooo good.” To be honest, I did have one person say they were too rich for his tastes. But since I’ve never said that about a dessert in my life I think I’ll discount his opinion.

Peanut Butter Chocolate Chip Bars

Ingredients:

3/4 cup peanut butter
2 eggs
1 cup packed light brown sugar
2 cups Bisquick mix
1 bag (12 oz) mini chocolate chips

Directions:

Heat oven to 325. Spray an 8-inch square pan with cooking spray. In a large bowl, mix peanut butter and eggs until well blended. Stir in the brown sugar until combined. Stir in Bisquick mix just until moistened, then stir in chocolate chips. Spread mixture in prepared pan. Bake 35-40 minutes until golden brown.

  34. Anonymous – if you do a google search you can probably find a homemade biscuit mix that you could measure out to replace the bisquick. I haven't tried this method, so I'm not positive, but it seems like it would work. If you try it, let me know how it turns out! 🙂

  39. These look really good, I would love to make these this weekend for a family dinner but I'm supposed to make ice cream sandwiches, I'm thinking 2 birds, 1 stone. Are these sturdy enough that if I baked them 9×13 pan that they would hold up to being eaten as an ice cream sandwich? I'm sure they'd work if you ate it with a fork, but you know kids are going to want to pick them up and eat them – do you think it would work or should I stick to a standard cookie recipe?

  40. Becky – Thanks so much for your comment! Unfortunately, I'm not sure these would work for ice cream sandwiches. They are more crumbly than the average chocoalte chip cookie…probably due the peanut butter. They would be delicious served with ice cream, and I guess sandwiches might be worth a shot, but I would worry that they would crumble into pieces. Let me know what you end up trying! 🙂

  50. Lookin for a quick and easy dessert/snack recipe for New Years eve and came across this. I just happened to have a bag of mini-chocolate chips and all the other ingredients on hand here at home. Easy easy easy to make! And yuuuuummmmmmmy! I have to drink a tall glass of cold milk with each slice. But my husband loved it too and we were fighting over the last drop of the gallon of milk. I’ll probably make these frequently anytime I need to bake something quick to snack on.

  54. I used the Gluten Free Baking Mix from Aldi. The dough was really stiff, so I added about 1 cup of vanilla yogurt. I didn’t have enough chocolate chips, so I added 3/4 quick cook oats. It made a nice thick moist bar. I could have used a 9×13 pan instead and the center would have been done more. Center is a little grainy but moist and I am not sure if it was the GF mix or just not cooked enough.

  55. Just want to throw it out there, I love these! I’ve mAde them a few times before and they were perfect. Since then, I have switched to using trader joes no salt added peanut butter, which is literally just dry roasted peanuts, nothing else. And we had a box of bisquick in the cabinet, which I didn’t realize until it was too late, was the heart healthy version so among other things it had a reduced fat content. They turned out…awful. So make sure you use normal bisquick and not all natural peanut butter and they are fantastic

  56. Could you use a different biscuit/pancake mix?  Could I substitute Trader Joe’s Buttermilk Pancake and All Purpose Baking Mix?  I don’t like the ingredients in Bisquick.

    I tried this recipe with the Trader Joe’s mix and it turned out great! Delicious! I actually liked it better than with the Bisquick mix!

  58. Allrecipes.com has a really good recipe for a replacement Bisquick, and you can halve or even quarter the batch so you don’t have a ton of extra left. I’ve used it in a few Bisquick recipes and had good results every time. I checked and it’s just called Homemade Baking Mix. Good luck!

  59. I made these ages ago and forgot about the recipe until recently, then went looking for it (because they’re fantastic). I found your version and Bisquick’s, which had just a few small differences. They add vanilla, and instead of all the chips in the dough, they mix in 3/4 of a cup then reserve the rest of the bag to spread over the top melted. The also recommended a huge jelly roll pan to bake it. I split the difference this time– 9×13 pan, half the chips mixed in and half are waiting to go on top. They’re still baking and I’m waiting impatiently!

  60. I made them a couple times and they are very good. But there is way too many chips in them for this recipe, my advice would be to use half a bag instead of a whole bag. Also when you pull your cookie bars out of the oven they will look like they are not done but rest assured they are. Pull them out and let them fully cool off before you cut and serve them, if you dont then they will be hot and runny and gross lol. Just be patient, put them in the refrigerator and let them fully cool off for at least 2 hours.
