Chicken Bacon Ranch Pizza

You are going to love this chicken bacon ranch pizza! This is such an easy meal to make, and so incredibly delicious. Doesn’t it just look warm and cheesy and wonderful? I love meals that satisfy both the “quick and easy” requirement and also the “dinner will not cause a tantrum” requirement. 🙂 If you follow me on Instagram, you know that we have had an incredibly busy fall. The kids and I (and Mike when he’s not at work) have made it our goal to attend as many fun fall activities as humanly possible – we’ve been apple picking (twice), taken a hay ride to a pumpkin patch, gotten cider and donuts multiple times, and enjoyed a few different corn mazes. We are definitely lucky to live in West Michigan and have so many fun places close by!

All that outside time keeps Zeke incredibly entertained while we’re there, but by the time we get home in the early evening, he is cranky and hungry. And I still have to cook dinner if I want us all to eat together as a family (and I do!). That is why I love easy dinners like this chicken bacon ranch pizza. I found this recipe on the Hidden Valley® Original Ranch® Pinterest board for easy meal ideas. I immediately bookmarked it and made it on our next busy outside day. I already had pizza dough in the freezer, which means that start to finish this pizza took 20 minutes to make. And it is so good! I love that it is a unique spin on pizza, but still a flavor that everyone in the family loves. I wondered if Zeke would protest since this isn’t his usual favorite pizza, but I was pleasantly surprised when he ate every bite I put on his plate with zero complaints! The thing that makes this pizza so easy is that there is no complicated white sauce –  just a thin layer of buttermilk ranch dressing. Add in some chicken, bacon, tomatoes, and two different types of cheese, and you’re left with a pizza that is on the table in 20 minutes and makes everyone happy. 🙂

Chicken Bacon Ranch Pizza

Yield: Makes 1 Pizza

Ingredients:

  • Pizza dough for one pizza (I used half of this recipe)
  • 1/4 cup Hidden Valley Buttermilk Ranch Dressing
  • 3/4 cup shredded mozzarella cheese
  • 1 cup cooked chicken, shredded
  • 1/4 cup bacon, cooked and crumbled
  • 1 tomato, seeded and diced
  • 2-3 green onions, chopped
  • 3/4 cup shredded cheddar cheese

Directions:

  1. Preheat the oven and a pizza stone to 500° F.
  2. Sprinkle a piece of parchment paper lightly with cornmeal. Gently roll out the pizza dough on the parchment paper until it is a large circle. Spread the Ranch dressing in a thin layer evenly over the dough. Sprinkle with shredded mozzarella, then top with grilled chicken, bacon, tomato and green onions. Sprinkle with shredded cheddar.
  3. Using a pizza peel, transfer the parchment and pizza to the preheated pizza stone. Bake for 12-13 minutes, or until the cheese is melted and bubbly.

  1. Great recipe, Megan! My favorite weeknight meal is paninis (which is especially amazing if you have a panini press). Our favorite flavors are turkey, cheddar, and roasted broccoli or ham and swiss with stone ground mustard. So good and cleanup is easy too!

  2. When I need food fast, I like to keep everything I need on hand for soft shell tacos. I can my own homemade salsa and keep it on hand year round, so its as easy as browning the ground beef, chopping some lettuce, and sprinkling some cheese on a soft tortilla. Even with 1lb frozen ground beef, dinner can usually come together in 20 min or less.

  4. It may sound crazy but we love Trader Joe’s spinach and artichoke dip. So I take that and some precooked chicken that I chop up, heat it up, scoop out the inside of a loaf of Italian bread, fill it with the chicken-spinach artichoke mix and bake it for about 15 minutes just until it’s all heated and the bread is crunchy. We actually had this last night for dinner. Love it. And I love the sound of your pizza. That is going on my dinner rotation next week.

  5. On busy nights, I try to keep it simple and healthy. We usually go for a salad, baked salmon (with a little Dijon mustard and marmalade mix smeared on top) and a baked potato. It’s filling, yummy and rather nutritious!

  16. My go-to meal for busy nights has always been chicken or shrimp stir fry. It is healthy and can be made in under 25 minutes.

  41. Burritos are a great busy night meal. We stuff them with whatever is in house!

On busy nights, I put my rice cooker to work: Right in the pot, I soften some chopped onion in oil, then add the raw rice, sliced turkey kielbasa or leftover chicken, whatever veggies I have on hand or in the freezer (carrots, broccoli, spinach, etc.), and some water or stock. Push the button, and that’s it! In less than an hour, I have an easy one-pot meal that I don’t have to watch or stir.

  70. If I know in advance that my day will be very busy I’ll rely on my slow cooker but it it’s unexpected, then I rely on my freezer. I keep a supply of cooked meats and sauces so I can cook some pasta and have a meal on the table in no time.
