No-Bake Chewy Granola Bars

No-Bake Chewy Granola Bars

These no-bake chewy granola bars are so good! Even better, they are incredibly quick and easy to make.  If you like those pre-packaged Quaker chewy granola bars, you will love these.  They are full of oats and honey and they have a great texture – very soft and chewy. And of course the chocolate on top only makes them better. 🙂 I’ve made these multiple times since I discovered the recipe, and I try to always keep a stash in the freezer for quick snacks. This is by far the easiest granola bar recipe I’ve tried yet, and I hope you like it as much as we do. 🙂

Yield: Makes 10-12 bars

Prep Time: 10 min

Cook Time: 10 min

Total Time: 20 min

Ingredients:

  • 4 tablespoons butter
  • 1/4 cup honey
  • 1/4 cup packed light brown sugar
  • 2 cups quick cooking oats (don't substitute rolled oats)
  • 1 cup rice krispies cereal
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips

Directions:

  1. Lightly coat a 9X11-inch pan with cooking spray and set aside.
  2. In a large bowl, stir together the oats and rice krispies and set aside. In a small saucepan, combine the butter, honey and brown sugar. Cook, stirring frequently, over medium heat until the butter melts and the mixture begins to bubble. Let simmer for 2 minutes. Remove from the heat and stir in the vanilla.
  3. Pour the butter mixture over the oats/rice krispies and mix until evenly moistened. Transfer the mixture into the prepared pan and use a piece of waxed paper, lightly coated with cooking spray, to press the mixture down very firmly. Sprinkle the mini chocolate chips on top and press down lightly so they stick. Let the bars cool for at least 2 hours at room temperature before cutting into rectangles. Store in an airtight container at room temperature for 2-3 days.

  6. Hi Megan! I love homemade granola bars. 🙂 So much better than storebought. And cheaper, too! I always have homemade bars on hand at my desk. They get me through the afternoon in the office!

  7. Hi Megan, I was wondering if you have tried making them with rolled oats? I only buy rolled oats and I really want to make these, lol! Thanks

  8. Hi Megan –
I’m trying to make these for a friend of mine that is Vegan. Any ideas of what to replace the butter with? This particular friend does eat honey even though it’s not Vegan. Let me know! Thanks!

  9. I love homemade granola bars! The recipe I use doesn’t call for butter, but does have peanut butter.
    2 1/2 cups Rice Krispies
2 cups oats (I use rolled oats and it works fine)
    1/2 cup honey
    1/2 cup brown sugar
    1/4 tsp salt
2/3 cup peanut butter (I use crunchy but creamy is fine)
    1 tsp vanilla
    1/2 cup chocolate chips
Melt honey, brown sugar and salt over medium low heat until boiling. Let boil 30-60 seconds. Remove from heat and stir in vanilla and pb until smooth. Pour over cereal and oatmeal and stir until well mixed. Let cool for a few minutes, then stir in choc chips. Spread into a greased 9x13in pan and press down firmly. Let sit until cool, then cut into bars. I find a pizza cutter works great to cut them!

  10. These are delicious! And so easy to make. I might not buy granola bars ever again!! Thanks for a great recipe!

  11. I made these granola bars and my kids loved them so much that I have made them twice this week…

  12. Meg, for a vegan version you would use Earth Balance butter and also replace the honey with agave or maple syrup or a mixture of both! I made some today like this (we’re vegan and my son has a peanut allergy) and they were delish!

  13. Hi! Can I use more oats instead of the cereal?
