I have got a super easy slow cooker meal to share with you today! These crockpot shredded chicken tacos are so easy to throw together, and they taste great.

The addition of cilantro and lime adds a nice fresh flavor, and you can’t beat a crock pot meal that takes 5 minutes to prepare!

Everyone loves chicken tacos, and this easy recipe is sure to be a family favorite. Don’t forget to add all of your favorite taco toppings – these tacos would be perfect with extra cilantro, avocado, tomatoes, etc.

The recipe calls for a packet of taco seasoning, but if you often find those too salty, I would start with 1/2 or 3/4 of a packet and go from there. Or, of course, you could always make your own and add salt to taste. 🙂

No matter how you make it, I’m pretty sure these chicken tacos will be a hit!

Crockpot Shredded Chicken Tacos with Cilantro and Lime

Ingredients:

  • 1 lb. boneless skinless chicken breasts
  • juice from 2 limes, plus extra for topping
  • 1/2 cup of cilantro, roughly chopped, plus extra for topping
  • 1 packet of taco seasoning
  • 1 tsp dried onions
  • 1/2 cup of water
  • Assorted taco toppings

Directions:

  1. Add all ingredients except the toppings to the Slow Cooker. Cook on low for 6-8 hours.
  2. Shred the chicken with two forks and mix well with the juices in the crockpot.
  3. Spoon chicken into soft taco tortillas. Squeeze a little extra lime juice on the meat and top with cheese, sour cream, salsa, tomatoes, and extra cilantro.

  8. Wow! Made these today…followed the recipe, but doubled it with the idea that I would use the extra chicken to make enchiladas another night. Despite doubling, I did not use the whole packet of seasoning mix.

    The taco meat cooked all day on low in my crockpot. When I arrived home this evening, the house had a distinct citrus smell from the lime….when I used the forks to shred the chicken, it fell apart easily. The liquid was just liquidy enough – the chicen was tender and moist. We made our tacos with hard shells, fresh salsa, cilantro, cheese and sour cream. Great meal!! Thanks for the recipe.

    For the enchiladas, we are planning to add diced green chiles and cheese to the chicken and roll the meat into tortillas. We’ll top them with chesse and enchilada sauce and bake.

  9. I’d love to try this but only have a few hours. Have you tried this on the “high” setting? If not, what do you feel an equivalent would be to 6-8 hours on “low.”?

  10. Just made this for dinner and it was a HUGE hit. My boyfriend said its the best dish I ever made. I used the entire package of hot taco seasoning and about 1.68 lbs of chicken and it was so delicious! Had avocado, tomatoes, shredded lettuce, and cheddar on the side. YUMMY!

  13. I just made this last night for our neighborhood block party, and EVERYONE loved this recipe. It beat out all the other entrees people brought including homemade pizza, sliders, BBQ chicken and hotdogs. I was quite shocked that this even became a hit with the younger kids.

    I quadrupled the recipe since I had a lot of people to feed, and it was so simple. I served with a side of Spanish rice.
