Gingerbread Whoopie Pies

Day 12 of the 12 Days of Christmas Treats! I can’t believe we are at the end of the 12 Days of Christmas Treats for this year. But good news – I saved one of the best for last. 🙂 You will love these gingerbread whoopie pies! I love trying different flavors of whoopie pies (in the past I’ve made pumpkin whoopie pies, s’mores whoopie pies and red velvet whoopie pies), and these are just as good, if not better, than previous versions.

Gingerbread Whoopie Pies

For those who aren’t familiar, a whoopie pie is just two cake-like cookies sandwiched around a creamy filling. In this case the cookies are gingerbread flavored, and the filling is a simple cream cheese icing. The gingerbread flavor is strong, which I love, but be careful if you’re not a huge gingerbread fan.

The cream cheese icing is the perfect accompaniment, and these cookies are so fun to make and eat. Plus, they look pretty cute and impressive on your cookie tray! I sprinkled powdered sugar on top for an extra festive top, but feel free to leave it off if you prefer. Enjoy!!

Soft Iced Oatmeal Cookies

Day 11 of the 12 Days of Christmas Treats! These soft iced oatmeal cookies are a classic. They are incredibly soft and chewy, and there is something appealing about how simple they are.

The oats are pulsed in the food processor before being mixed into the cookies and I think that contributes to the wonderful texture of these cookies.  There is also plenty of cinnamon and nutmeg added in as well, giving them a perfectly spiced flavor. The cookies are good by themselves (especially warm out of the oven!), but are even better once the glaze is added.

They are definitely addicting, so don’t say I didn’t warn you. I hope you try these – sometimes it’s nice to have a simple and classic alternative to the more decadent cookie options this time of year. 🙂

Candy Cane Fudge

Welcome to day 10 of the 12 Days of Christmas Treats!

I’ve got a great new fudge recipe for you today. Believe it or not, I hardly ever make fudge. Past recipes I’ve used have never seemed to turn out quite right. The fudge would either refuse to set, or it would get all clumpy.

Thankfully this candy cane fudge recipe is the exception! This recipe is super simple to make, and it turned out perfecly the first time I tried it. Trust me, if I can make this delicious minty fudge, you can too. 🙂

It’s a fairly traditional fudge recipe that makes use of Andes’ Peppermint Crunch Baking Chips to make it taste nice and pepperminty. It’s smooth and rich and melts in your mouth, just like fudge should. I also love that the fudge is pink, the perfect color for a peppermint flavored treat!

Like most fudge recipes, it’s super sweet, so be sure to cut the pieces small. If you’re a fan of peppermint flavored treats, you will love this candy cane fudge!

White Chocolate Chip Cookies with Peppermint Glaze

Day 9 of the 12 Days of Christmas Treats! These white chocolate chip cookies with peppermint glaze are perfect for Christmas! They look so pretty on a cookie tray, and they taste even better than they look.

The cookie itself is a pretty traditional (delicious) chocolate chip cookie that substitutes white chocolate chips for the regular chocolate version. The cookie is then topped with a delicious peppermint glaze. By the time you sprinkle on some chopped up peppermint kisses, the cookie has evolved into something that is absolutely perfect for Christmas.

Chocolate Peanut Butter Crunch Bars

Day 8 of the 12 Days of Christmas Treats! These chocolate peanut butter crunch bars are so fun. They are like more exciting, better tasting versions of rice krispie treats.

The base is similar to a typical rice krispie treat, but with chopped pretzels mixed in. From there, they are topped with a peanut butter layer, then a chocolate layer, and finally some chopped peanuts and pretzels. The bars are a nice mix of sweet and salty and are definitely more interesting than plain old rice krispie treats. 🙂

If you’re looking for a new twist on an old classic, give these chocolate peanut butter crunch bars a try – we love them!

Day 7 of the 12 Days of Christmas Treats! How fun are these homemade peppermint oreos?? If you’re anything like me, you have a hard time resisting those holiday oreos you find in the store this time of year. But good news – now you can make your own! And dare I say, these homemade cookies taste even better than the original??

Homemade Peppermint Oreos

The cookies are crisp and crunchy, and the cream is perfectly sweet and full of peppermint flavor. Overall it tastes like a peppermint oreo, only better!  And best of all, you don’t have to roll and cut out the dough. Just drop by rounded spoonfuls and they turn into perfect little circles in the oven! 🙂

Cinnamon Sugar Biscotti

Day 6 of the 12 Days of Christmas Treats! It’s no secret around here that I love biscotti. I’ve made quite a few different variations over the years, and they are some of my favorite Christmas cookies to make again and again. I love to sit down in the evenings and relax with some Christmas music, a cup of tea and a cookie. It’s become tradition that a biscotti recipe is part of the 12 Days of Christmas Treats, and this year this cinnamon sugar version is the winner.

These cookies are delicious. They are perfectly crunchy, but thankfully won’t cause you to break a tooth when you bite into them. You can’t go wrong with cinnamon and sugar, and they kind of taste like a snickerdoodle in biscotti form. They are very freezer friendly, keep well, and make wonderful gifts.

If you’re a coffee or tea drinker, you will love this recipe. And I can vouch for the fact that they pair perfectly with a steaming hot mug of chai tea. 🙂

Minty Fudge Oat Bars

Day 4 of the 12 Days of Christmas Treats! I have a feeling you are going to love these minty fudge oat bars.

I wasn’t entirely sure that mint, chocolate and oatmeal would go well together, but once I got the  idea for these bar cookies in my head, I couldn’t get it out. I’ve made similar cookies in the past, without the mint, but I thought the mint might make a nice Christmasy addition. And I’m so glad I tried it because we absolutely loved these bars.

Minty Fudge Oat Bars

They are so soft and rich. The minty fudge layer ends up being a great accompaniment to the chewy oatmeal cookie part. If you are a fan of mint and chocolate together, I have a feeling you will love these as much as we did.

A word of warning though – you may want to give people a heads up that these are mint flavored, or they may be a little surprised when they try them. : )

Chocolate Toffee Shortbread Bars

Day 3 of the 12 Days of Christmas Treats! I am so excited to share these chocolate toffee shortbread bars with you. I had a feeling I would like these bars, but I had no idea just how much I would love them.

Chocolate Toffee Shortbread Bars

The shortbread crust is absolutely melt-in-your-mouth perfect. The topping consists of melted chocolate and toffee bits and brings the perfect amount of sweetness to the shortbread. The whole thing just kind of crumbles into deliciousness when you take a bite.

Be careful though – they’re addicting! They also freeze beautifully, and as a side note, they taste great right out of the freezer as well. 🙂
