Chicken and White Bean Chili

Remember back when I told you about our chili cook-off at work and I shared my friend’s amazing white chicken chili that won the whole thing?  Well good news – today I’m sharing the second place winner!  This chicken and white bean chili was a close contender for first place in my mind. It’s mildly spicy, cheesy, and has a different enough flavor to really make it stand out. Like most other chili recipes, it’s very easy to put together and makes a great Winter meal. We just had a nice little snowstorm in Michigan and as I was watching the snow fall I started thinking about making this chili again. It’s warm and comforting and ranks right up there as one of my favorite chili recipes!

Chicken and White Bean Chili

Chicken and White Bean Chili

Ingredients:

2-3 cups cooked chicken
2 cans great northern beans, drained and rinsed
2 jars salsa
2 small cans V8 (5.5 oz each)
3-4 cups chicken stock
2 Tbsp Worcestershire sauce
2 Tbsp soy sauce
cumin, to taste (If unsure, start with 1/4 tsp)
Adobo seasoning or chipotle seasoning, to taste (if unsure, start with 1/4 tsp)
8 oz shredded cheedar cheese

Directions:

Put all ingredients except cheese in a crockpot. Heat on low for 4 hours. Before serving, add in the cheese and stir until melted.

  5. yum! my first experience w/ chicken chili (at ruby tuesdays) was not so good, but i love this version….sort of a cross between “regular” chili and chicken chili. i’ll have to give it a shot!

  10. Made this tonight! The flavor was pretty good but its consistency was like soup. When I make chili I expect it to be thick and hearty. I think next time I will add a can of tomato paste to thicken it up. Other than that, it was pretty good!

    • ah, sorry! My previous comment made absolutely no sense because I thought we were talking about a different recipe! I am replying from in my wordpress admin and didn’t pay close enough attention to the chili you were referring to – sorry! Anyway, yes, it is fairly soupy. For some reason I’m not a huge tomato paste fan, but I’m guessing that would thicken it up! You could also try just adding some more beans or chicken and less liquid.

    I heard you got snow in Michigan. My parents are in Grand Rapids said its been the most bizarre year with no snow and warm temperatures!

    • Yes, we did get a bunch of snow this past weekend! It finally felt like Winter. I don’t mind the warm temperatures and lack of snow though! How fun that your parents are in Grand Rapids – it’s a great town 🙂

  13. I made this recipe and it was fabulous. I wasn’t quite sure what size jars of salsa I should buy so I bought the large size. I actually cooked the chicken in the broth and it came out well.
